This tomato and garlic free salsa is going to be such a hit at your next get together! I know what you’re thinking…How does one even think about making salsa without tomatoes and garlic?

When it’s this vibrant and flavorful, no one is going to even notice!

Mangos are actually one of my favorite fruits and the consistency is perfect for scooping. I’m not a huge raw onion lover, so adding cabbage gives it a really nice crunch! Bonus points if you use purple cabbage, as it’s such a pretty visual.

Now, when you think of salsa, you probably think of an appetizer dish. That’s my first thought too as I’m the biggest chip and dip person you’ll ever meet!

But you can actually serve this salsa as a side dish. Paired with rice and your fish of choice and this will elevate any dinner. Dollop a few chicken breasts with this delicious salsa and say goodbye to boring chicken!

Of course my favorite way to devour this recipe is with a grain free tortilla chip. Specifically the lime flavor ones!

Let’s talk about the peppers. If you like green, use them! They aren’t my favorite, which is why I go for red or orange bell peppers.  This is another way to pump up the color factor. When food is colorful and inviting, I feel people can’t resist digging in!

Colorful Mango Salsa

Ingredients

  • 3-4 ripe mangos, finely chopped (I used champagne mangos)
  • 1 finely chopped bell pepper (feel free to mix the peppers)
  • 1 1/2 cups chopped purple cabbage
  • 2 TBSP chopped green onion
  • 1/4 cup finely chopped cilantro
  • Juice from 1 lime
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Mix all ingredients together, cover and marinade between 1 - 24 hours.
